 This is one of the quickest curries one can make to satisfy the hunger for delicious Rajasthani food.  

  Let's start with the list of ingredients (Serves-2)  

1. Three to Four Papad.  

2. One finely chopped Onion and Four green chilies.  

3. Ginger & Garlic paste.  

4. One Coffee spoon each of Turmeric Powder, Red chili powder, Coriander powder, Mustard seeds, Garam masala and Asafoetida.          

5. Salt to taste.  

6. Coriander leaves to garnish.  

7. Five Table spoon oil.  


Steps to Cook  

1. Put oil in the Pan and keep the flame low. You can use oil of your choice - I am using Mustard oil as it goes well with this dish.  

2. Wait for two minutes and put Mustard seeds and Asafoetida and let them pop. Keep stirring.  

3. Now put the onions and green chilies and fry them until the onion turns golden brown. Put the flame to medium.  

4. Take a mixing bowl and put Ginger & Garlic paste with Turmeric Powder, Red chili powder, Salt and Coriander powder. Mix to form a smooth paste.  

5. Put the paste in the Pan and keep stirring for another 10 minutes.  

6. Slightly roast the papad and break them into medium pieces and put them in the pan.  

7. Add 2 cups of water to it and close the lid. Put the flame on low and let it cook for 15 minutes.  

Remember the more it will cook the better flavors and aroma will infuse in the gravy.  

8. Open the lid, mix well add Garam Masala and chopped coriander leaves to it.
Cover the lid.  

    Your Papad curry is Ready!


  

Serve it Hot with Jeera Rice or Parathas.
